Leslie's Chicken & Spinach Citrus Salad
4 oz chicken breast (with lemon pepper) (Red)
1c spinach (Green)
4 sweet peppers, sliced (Green)
1/3 orange Sunflower Seeds
2/3 orange Citrus Vinaigrette Dressing (Orange)
Shredded Cheese (Blue)
Hint of Lemon Juice (Free)

BLTs
1 slice whole wheat bread (Yellow)
4 slices turkey bacon (Red)
Lettuce & Tomato (Green)
Avocado (Optional - Blue)

This one pretty much explains itself, but if you miss the "creamy-ness" of a spread like mayo, you could mash up some avocado for an added flavor and to substitute for that texture!

Steak Fajitas
2 small corn tortillas (Yellow)
4 oz* (ish) lean steak (Red)
Sweet peppers* (Green)
Avocado OR Shredded cheese* (Blue)
Lime juice (Free)
Hot sauce (Free)
*Measurements = however much fits in each container

I pre-cook my meat so all I have to do is heat it up when I'm ready to use it - that way I can take it on the go in a cooler and it's ready when I need it.

I just sauteed my peppers - you could add a little EVOO if you have any tsps left for the day, and tossed my steak in the pan to heat it up. I added a little lime juice for extra flavor.

Warm the tortillas in the oven or microwave, and mash and spread half a blue container of avocado on each tortilla. You could do cheese instead, but since I was making 2 and the blue serving size is pretty small, I felt like splitting avocado was easier/better than just a tiny sprinkle of cheese.

Split meat/peppers mixture, putting half on each tortilla, toss on a little hot sauce, fold in half, and enjoy! You've gotten almost all your colors in one meal!

You could obviously also do this with chicken, add onions (I'm not a fan), etc.
